Budingum

Boudin noir cum malis et patatis

Budingum,[1] Francogallice boudin[2] est botuli genus in Francia aliisque terris Francophoniae factum, cuius sunt duae species principales. Boudin noir est sanguiculus, videlicet intestinum sanguine adipeque porcinis fartum. Boudin blanc (botulus albus) autem lacte et gallina aliove carne alba farcitur. Exstant et alii boudins; exempli gratia, Acadiani Ludovicianae boudin faciunt ex carne porcina et oryza.
