En enzymologie, une tryptophanase est une lyase qui catalyse la réaction chimique :
- L-tryptophane + H2O indole + pyruvate + NH3.
Cette enzyme intervient dans la production d'indole par désamination du tryptophane, un acide aminé protéinogène.
