Arsik inggih punika salah satunggaling olah-olahan khas wewengkon Tapanuli ingkang kondhang.[1] Masakan punika dipunmangertosi ugi minangka ulam mas bumbu kuning. Ulam mas punika ingkang dados bahan utama. Ulam punika nalika dipun-ginakaken boten dipunicali sisikipun.

Bumbu arsik punika khas sanget, gadhah kandhutan sapérangan komponèn ingkang khas saking wewengkon pareden (pagunungan) Sumatera Lor,[2] kadosdéné andaliman lan asem cikala (woj kecombrang), kejawi bumbu nuswantara ingkang sampun limrah kadosdéné laos lan seré. Bumbu-bumbu ingkang dipundamel alus lajeng dipunolesaken dhateng awakipun ulam sawetawis wekdal. Menawi sampun lajeng ulam kasebat dipunmasak kanthi ngginakaken lisah/ minyak ingkang sekedhik lan ugi ngginakaken geni ingkang alit kemawon dumugi radi garing.
