Mayonnaise

A jar of mayonnaise

Mayonnaise (Mayo for short) is a thick sauce. It is an emulsion of vegetable oil and egg yolk, with either lemon juice or vinegar.[1] It is often used as a condiment for food such as salads, sandwiches and french fries.

  1. Mayonnaise is an emulsion of oil droplets suspended in a base composed of egg yolk, lemon juice or vinegar, which provides both flavor and stabilizing particles and carbohydrates." On Food and Cooking, Harold McGee, Scribner, New York, 2004 page 633.
